the best chocolate cake ever

It was M’s birthday a couple of weeks ago and I don’t believe any birthday is complete without the birthday cake, candle blowing, make a wish ritual so that meant he had to pick a cake. M requested the birthday cake I’d made for our nephew, Little M, a few months ago (minus the Mickey Mouse theme). When I was deciding on our nephew’s cake, I searched high and low online for a great chocolate cake recipe and I settled on this one from The Faux Martha. I’m not sure why, cause I hadn’t ever been to her blog before but I just loved everything I saw and for some reason I totally believed her when she said this was the best chocolate cake recipe.

You know what, she totally didn’t disappoint and she must be a woman of her word because this cake was out of this world and worth every butter-laden bite. This cake is rich without being heavy and I mean rich in the best possible way.  It’s light and fluffy and freakin’ fabulous.  It actually looks like gelato before it’s baked and you’ll totally have to hold yourself back from just eating it by the spoonful.  

Chocolate cake gelato batter 2Thankfully M grew out of the Mickey Mouse phase about two years ago so this cake was a little easier to make than Little M’s. I also used The Faux Martha’s salted Nutella buttercream recipe but I went easy on the salted part.  We had kids around and I wasn’t sure if they’d like the extra salty kick but next time it’s an adults only deal I’m definitely going for the true salty sweet combo.

This recipe is pretty much idiot proof because it’s really well written and very detailed so you don’t have to be a Cordon Bleu certified pastry chef (one of my secret dreams) to have this cake turn out. I made double the recipe and as you can see it makes a lot of cake. If you’re a chocolate cake lover then you definitely have to give this recipe a try. I’ve also frozen it and it was just as crazy good.

Please excuse the crooked cake but it’s really a crooked cake stand! I’ve bought two cute porcelain cake stands and BOTH of them are on a 45! WTF is that? Note to self: inspect the cake stand before buying it (a.k.a. opening the box Einstein).

    Lovely looking cake and I am sure it was delicious, you cant really go wrong with Nutella, its the sweet version of Parmesan ,it solves and makes every good. Birthday rituals are the best, tis to many more!
