slow cooker turkey bolognese sauce

You have to try this recipe because it is freakin’ amazing!!!  I’ve been legit eating this slow cooker turkey bolognese sauce every day for lunch during the last week, it’s THAT good!!!  Apart from it being delicious, it’s also healthy, crazy easy to make and it’s a great make ahead recipe and perfect for food prep Sunday.  How many more reasons do you need to try this?  None, I promise, you won’t regret pulling your slow cooker out of the box and spending 20 minutes prepping this recipe. mediterranean pancetta pasta

I think it’s about time I posted a savoury recipe around here.  This mediterranean pancetta pasta is pretty healthy and you can even make it more so by eliminating the pancetta but why would you want to do that???  Pancetta equals protein and protein is important so it’s a no brainer.  We all know that pancetta is fancy bacon so that means it just makes everything better.  The feta cheese gives it a great creaminess and saltiness that is just right that makes this mediterranean pancetta pasta just perfect and a total must. healthy bolognese sauce

Happy New Year!!! I hope everyone had a great holiday season and I’m wishing that your 2015 be filled with much laughter, love, and many kisses!  We all know that after the overload of gluttony during the Christmas season we need to get back to a healthier routine. It’s tough to think healthy especially when it’s cold and dreary outside but we have to make the effort. This is healthy comfort food (it does exist), which is exactly what I need at this time of year. This is my take on a healthy Bolognese sauce (a.k.a. as meat sauce at my house). It’s not a quick recipe but it is easy and it can be a total lifesaver because this is freezer friendly. Continue reading

weekly meal prep

Weekly meal prep started to happen on my quest to live a healthier lifestyle. What is weekly meal prep? Well, it’s part of my Sunday morning in the kitchen making sure I have healthy stuff to eat for the coming week. I’m not organized enough or have enough energy to make amazing food for lunch and dinner every night during the week. Between commuting, work, running errands, working out and all the other day to day stuff, well, let’s just say I don’t have a lot of time to be making food for lunch much less wasting time thinking about what I’m going to make.   Continue reading

deluxe grilled chicken fajitas

Fajitas on the table

I hope everyone has been enjoying their weekend.  It looks like the good weather is here to stay, finally!!!  One of the bonuses of living in Madrid is that you can grill all year round.  Sure in the winter it means M has to wear his winter coat but it’s completely doable especially since Madrid is really dry and rain doesn’t happen very often.  Now M can enjoy the grilling without having his ski jacket smelling like BBQ smoke!

These fajitas are one of our favourite meals.  I used to make fajitas the “old fashioned way” (in the skillet with that fajita powder mix) however I tried making them once on the BBQ and we haven’t gone back since.  I’m sure you can follow this recipe and simply cook the chicken breasts in a sauté pan over high heat so they get well marked on the outside.  The veggies can be cooked in the same sauté pan but you’d want to add a little bit of liquid like water.  I haven’t tried this method yet so if you do, I’d love to hear how they worked out for you.  Continue reading
