You have to try this recipe because it is freakin’ amazing!!! I’ve been legit eating this slow cooker turkey bolognese sauce every day for lunch during the last week, it’s THAT good!!! healthy chocolate blueberry cookies
I’m all for healthier versions of classics but a healthy chocolate chip cookie just doesn’t sound right because chocolate chip cookies have to be bad for you to taste good, right? Honestly, I love a good chocolate chip cookie but this healthy version really does taste pretty amazing. My husband even said it’s his favourite cookie! Full disclosure: M is Spanish so chocolate chip cookies aren’t a homegrown classic so he doesn’t have that nostalgic link to it but he’s always honest (sometimes brutally so) which means these healthy chocolate blueberry cookies are pretty fabulous. turkey chili
I’m still in complete comfort food mode and this recipe is a result of this mood I’m in. I’m also still trying to keep things healthy after all the indulgence in December. This turkey chili is pretty healthy and you can make it even more so if you eliminate the bacon and just sauté your veggies in olive oil instead. Continue reading
healthy bolognese sauce
Happy New Year!!! I hope everyone had a great holiday season and I’m wishing that your 2015 be filled with much laughter, love, and many kisses! We all know that after the overload of gluttony during the Christmas season we need to get back to a healthier routine. It’s tough to think healthy especially when it’s cold and dreary outside but we have to make the effort. This is healthy comfort food (it does exist), which is exactly what I need at this time of year. This is my take on a healthy Bolognese sauce (a.k.a. as meat sauce at my house). It’s not a quick recipe but it is easy and it can be a total lifesaver because this is freezer friendly. Continue reading
baked blueberry apple oatmeal
The cold weather has finally hit Madrid and this means I’m in the mood for warm, spoon worthy food. Now when I say cold weather I don’t mean my hometown cold but Spain cold, which is about anywhere between 8 to 15 degrees Celsius (I know, I’m a lucky girl). Continue reading
grilled vegetables
Honestly, I feel kinda silly writing this recipe because it seems so basic to me however I thought that some people just aren’t that into cooking and what might seem ham and cheese sandwich simple to me may not be the case for others. I used to pretty much follow recipes to the letter when I started living on my own and as time went on with every recipe I started to gain confidence and I would veer a little from the recipe and so on until I stopped relying solely on recipes. I still use recipes all the time especially with my “special occasion” food but our go to meals during the week are things that we throw together that result in healthy, nutritious, simple dishes that cover all the bases. I also take advantage of making extra so that I have decent stuff to eat at lunch everyday during the week at work.
morning glory muffins
I can’t remember how I stumbled upon this recipe online but I’m definitely glad I did. I found this morning glory muffin recipe here and I made them that same weekend. I have to apologize for the quality of the photos because they are pretty awful. A few months before going live with my blog, I started taking pictures of the food I was making and as I’ve mentioned before: photography isn’t my forte! These pictures are pretty bad and in hindsight I have no idea why I didn’t take a picture of the muffins outside of the ginormous muffin liners.
