I think it’s about time I posted a savoury recipe around here.  This mediterranean pancetta pasta is pretty healthy and you can even make it more so by eliminating the pancetta but why would you want to do that???  Pancetta equals protein and protein is important so it’s a no brainer.  We all know that pancetta is fancy bacon so that means it just makes everything better.  The feta cheese gives it a great creaminess and saltiness that is just right that makes this mediterranean pancetta pasta just perfect and a total must. weekly meal prep

Weekly meal prep started to happen on my quest to live a healthier lifestyle. What is weekly meal prep? Well, it’s part of my Sunday morning in the kitchen making sure I have healthy stuff to eat for the coming week. I’m not organized enough or have enough energy to make amazing food for lunch and dinner every night during the week. Between commuting, work, running errands, working out and all the other day to day stuff, well, let’s just say I don’t have a lot of time to be making food for lunch much less wasting time thinking about what I’m going to make.   Continue reading

Honestly, I feel kinda silly writing this recipe because it seems so basic to me however I thought that some people just aren’t that into cooking and what might seem ham and cheese sandwich simple to me may not be the case for others.  I used to pretty much follow recipes to the letter when I started living on my own and as time went on with every recipe I started to gain confidence and I would veer a little from the recipe and so on until I stopped relying solely on recipes.  I still use recipes all the time especially with my “special occasion” food but our go to meals during the week are things that we throw together that result in healthy, nutritious, simple dishes that cover all the bases.   I also take advantage of making extra so that I have decent stuff to eat at lunch everyday during the week at work.

morning glory muffins

I can’t remember how I stumbled upon this recipe online but I’m definitely glad I did.  I found this morning glory muffin recipe here and I made them that same weekend.  I have to apologize for the quality of the photos because they are pretty awful.  A few months before going live with my blog, I started taking pictures of the food I was making and as I’ve mentioned before: photography isn’t my forte!   These pictures are pretty bad and in hindsight I have no idea why I didn’t take a picture of the muffins outside of the ginormous muffin liners.

guess what i made???

PICKLES – I still can’t believe it!  I LOVE pickles especially bread and butter pickles.  One of the few drawbacks of living in Spain is that you can’t find sweet pickles at the grocery store.  Spanish pickles are crazy vinegary (is that even a word?) and I don’t like them at all; I usually buy German dill pickles.  I’d been seeing lots of blog posts about making quick pickles however I never found the little pickling cucumbers so I just forgot about it.  That is until I was in the El Corte Inglés (Spain’s answer to Macy’s) supermarket and I found little mini cucumbers.  Logically I snatched up a few little boxes and set out to make pickles.
