I hope everyone has been enjoying their weekend.  It looks like the good weather is here to stay, finally!!!  One of the bonuses of living in Madrid is that you can grill all year round.  Sure in the winter it means M has to wear his winter coat but it’s completely doable especially since Madrid is really dry and rain doesn’t happen very often.  Now M can enjoy the grilling without having his ski jacket smelling like BBQ smoke!

These fajitas are one of our favourite meals.  I used to make fajitas the “old fashioned way” (in the skillet with that fajita powder mix) however I tried making them once on the BBQ and we haven’t gone back since.  I’m sure you can follow this recipe and simply cook the chicken breasts in a sauté pan over high heat so they get well marked on the outside.  The veggies can be cooked in the same sauté pan but you’d want to add a little bit of liquid like water.  I haven’t tried this method yet so if you do, I’d love to hear how they worked out for you.  Continue reading

Lisbon: how i love thee!

M and I went to Lisbon for Valentine’s Day weekend this year and had a great time.  Portugal is one of our favourite places to visit!  I’m obviously a little biased because my parents are originally from Portugal and I have many fond memories in Portugal during our family vacations.  Nonetheless it’s a delightful place to visit and M and I try to go at least once a year.

guess what i made???

PICKLES – I still can’t believe it!  I LOVE pickles especially bread and butter pickles.  One of the few drawbacks of living in Spain is that you can’t find sweet pickles at the grocery store.  Spanish pickles are crazy vinegary (is that even a word?) and I don’t like them at all; I usually buy German dill pickles.  I’d been seeing lots of blog posts about making quick pickles however I never found the little pickling cucumbers so I just forgot about it.  That is until I was in the El Corte Inglés (Spain’s answer to Macy’s) supermarket and I found little mini cucumbers.  Logically I snatched up a few little boxes and set out to make pickles.

welcome and i how i found out that it’s only hair!!!

Where do I begin?  In reality this all started with a haircut or should I say a hair chop!!!  It took a simple haircut to get my butt in gear and start this whole blog thing.  I’ve been pondering the idea of a blog for years but I really didn’t know what I’d talk about and then finally I decided to just talk!

Of course I have interests and hobbies but I don’t dedicate enough of my time to be able to post something about these things daily.  Then I thought why do I have to talk about just one thing!? My life isn’t that one sided and I’m hoping I have a lot more to talk about then knitting and baking.

Yup, I’m a grandma in a 35 year old’s body!  I LOVE to knit and bake.  I’m also a pretty good cook but in all honesty I don’t cook every day.  If I cooked everyday my husband would think it’s normal and expected, this way he appreciates the times I do cook and who am I kidding, I just don’t have the energy to put together a kick ass meal every night!   We usually throw something on the grill and we’re good to go.
