This chicken, bacon and mango salsa sandwich screams summer and I’m dying for summer to arrive but spring hasn’t really sprung around here so summer feels like it’s a ways away. Honestly we could just skip spring all together and go straight to summer. I love summer; it’s by far my favourite season of all. I love the heat, the light clothes, long nights, eating alfresco, the beach, and the amazing memories that are made each summer.

Chicken bacon mango salsa sandwich 8 This mango salsa is amazing! I love the sweet and salty combo and it’s awesome with the saltiness of the chips and it’s perfect with the bacon. You could even add avocado and crumbled bacon to the salsa if you just wanted to serve it with chips. This mango salsa would go amazing on black bean tacos, on fish tacos, or in a salad.

For the mango salsa
  1. 1 cup diced mango
  2. 1/3 cup diced Spanish onion
  3. 1/4 cup cilantro, chopped
  4. 1 Tbsp of finely chopped jalapeño
  5. Juice of half a lime
  6. 1 tsp lime zest
  7. Salt and pepper to taste
For the sauce
  1. 1 Tbsp greek yogurt
  2. 1 Tbsp cream cheese (room temperature)
  3. Sriracha to taste
  4. Salt and pepper to taste
For the Sandwich
  1. 100 gr/3.5 oz of chicken breast
  2. Cumin
  3. Garlic powder
  4. Spicy paprika
  5. Salt and pepper to taste
  6. 4 slices of bacon
  7. Avocado
  8. 2 slices of whole wheat bread
For the salsa
  1. Start by making the salsa first so it has a chance to cool and for the flavours to meld. Rinse the diced onion and pat dry. I like to run the onion under water because it takes out that raw onion bite that would overpower the salsa otherwise.
  2. Add all the ingredients to a bowl and mix together.
  3. Set aside and chill.
For the Sauce
  1. Mix all the ingredients together and set aside. Remember that the yogurt and cream cheese will really cool down the heat from the sriracha so taste your sauce in order to get the right amount of spice.
For the sandwich
  1. Season the chicken breasts with cumin, garlic powder, spicy paprika, and salt and pepper. Grill or cook in a sauté pan with a spray of olive oil.
  2. Fry the bacon and drain.
  3. Lightly toast the bread.
  4. Mash the avocado on one of the slices of bread.
  5. Layer the chicken, bacon, mango salsa, and sauce on top of the avocado.
  6. Enjoy!
